• Punjabi Jacket Potatoes With Chicken


    2 large (each about 200g) US potatoes - boil till tender with the skin on
    2 tbsp olive oil
    salt for seasoning
    300g minced chicken meat
    1/2 tbsp dark soy sauce
    2 tbsp oil
    salt and sugar for seasoning
    To serve with
    salad leaves
    chopped spring onions
    sour cream



    1.Place potatoes into a baking tray, sprinkle salt and drizzle oil all over.
    2.Baked at 180c for about 20 mins or until the skin becomes crispy.
    3.When oil is heated, add in chicken, soy sauce, salt and sugar per taste.
    4.Fry while breaking the mince into smaller pieces with a spatula.
    5.Remove from heat once the chicken becomes crispy and dark brown in colour.
