• Kerala Chicken Roast


    500 gram chicken (cleaned and cut into small pieces)
    2 large onions (thinly sliced)
    1 tablespoon ginger (chopped)
    1 tablespoon garlic (chopped)
    2 green chillies (slit)
    1 teaspoon meat masala
    1/2 teaspoon pepper powder
    2-3 stalks of curry leaves
    Oil for fryin
    For Marination
    1/2 teaspoon turmeric powder
    3/4 teaspoon coriander powder
    2 teaspoon chilly powder
    1 teaspoon fennel powder
    5 cloves
    2 inch piece of cinnamon
    A small piece of nutmeg
    2 cardamons
    1 1/2 teaspoon vinegar
    Salt to taste



    1.Grind the ingredients mentioned under marination to make a paste. Marinate the chicken pieces with this paste and keep aside for one hour.
    2.After one hour, cook the marinated chicken with half a cup of water till well done. Drain excess water, if any. Heat oil in a pan and shallow fry the chicken pieces till golden. Keep aside.
    3.Heat 2-3 tablespoon of oil in another pan. Add ginger and garlic and saute for a couple of minutes. Add onions, green chili and curry leaves and saute till the onions become golden. Add pepper powder and garam masala and saute for a couple of minutes. Add the fried chicken pieces and roast till the masala gets coated over the chicken. Serve with rice or rotis.
