• Chettinad Spicy Chicken Curry

    Ingredients

    Chicken (cut into big pieces) - 2lbs,
    Tomatoes - 3nos, 
    Dry red chilies - 10 nos, 
    Black pepper - 2 tbsp, 
    Coriander seed - 2 tsp, 
    cumin seed)- ½ tsp, 
    Poppy seed - 2 tbsp, 
    Cloves - 5 nos, 
    Ani seeds- 1 tsp, 
    Oil - 5 tsp, 
    Onion - 3 nos chopped, 
    Curry leaves - 2, 
    Cinnamon stick - 1 inch,
    Ginger - 1 inch chopped, 
    Garlic - 3 cloves, 
    Water - 1 ½ cup

    Methods

    1. Put 2 tbsp of oil in a frying pan and lightly roast the chili, coriander, cumin seeds, ani seeds, cloves.
    2. Black pepper and poppy seed. 
    3. Grind it into a coarse paste. Put rest of the oil in a cooking pot and sauté the onion with cinnamon stick, curry leaves and garlic. 
    4. Sauté for 5 minutes, add chopped tomato and the masala paste.
    5. Fry for another 7 minutes. 
    6. Add chicken pieces and 1 1/2 cups of water and cook till the chicken becomes tender and should be covered with the masala.
