• Bangalore Triple Play Barbecued Chicken


    2 tbsp extra-virgin olive oil
    1/2cup finely chopped onion
    1 tsp ginger paste
    1 cup tomato ketchup
    1/2cup Limca
    1/4cup lemon juice
    1/4cup brown sugar
    2 tbsp mustard seeds
    2 tbsp extra-virgin olive oil
    1/2 tsp chilli powder
    2 tsp kosher salt
    Zest of 1 lemon
    2-3 cloves of garlic, finely chopped
    1/2 tsp black pepper powder
    4 whole chicken legs, cut into thighs and drumsticks



    1.Sauce: Place a saucepan on medium heat, add oil. When the oil is heated, add onion and ginger and stir it a couple of times. When the onions turn transparent, stir in the rest of ingredients and cook on low flame for 10 to 15 minutes.
    2.Rub: Mix all the ingredients together and rub it on the chicken pieces. Keep the chicken back in the refrigerator and allow it to stand for the next 30 minutes. Meanwhile, get your grill ready for direct and indirect cooking over medium heat.
    3.Arrange the chicken on grill, skin-side up, close the lid and cook it over direct medium heat for 7 to 10 minutes. Now, follow manufacturer’s instructions and cook the chicken over indirect medium heat for the next 20 minutes.
    4.Now is the time to make use of your homemade sauce. Take a basting brush and coat the chicken evenly with a thin coat of sauce. Remember to flip your chicken and sauce it on the other side as well.  Baste some barbecue sauce as well to give it a nice glaze.
    5.In the next fifteen minutes, you will notice the juices run clear. Now, your chicken is fully cooked. Remove it from the barbecue and allow it to stand for a minute, then serve your BBQ chicken with barbecue sauce and some grilled salad.
